## Questions & Answers

**Q: Is the bottom of this completely flat, or does it lower have a groove at the edges, just before the sides turn up?**
A: It has a groove where the sides turn up.

**Q: Can anyone comment on what may be causing the warping that is mentioned in so many of the reviews?**
A: If it's 18/10 there is a possibility that it will warp...18/0 should not warp, since it's only stainless steel, but it does from time to time, blame it on the poor manufacturing processes... 18/10 contains a 18 parts still and 10 parts of nickel...The warping is mostly created by the design of the pan itself...if pan has a rolled up edges, and most of them do, since manufacturers are trying to build " SAFE " edges for their customers...what this means is they don't want you to cut yourself on the edge... this also means, that if you go for the thinner gauge stainless steel pan, it will most definitely " WARP "...HOW...during the process of cooking in a pan, on heat pan will expand, once it cools of, it will contract..." SHRINK "...This will not happen wright away, but more you use it, more obvious warping itself will be...once again, for the biggest part this is happening with a thinner material pans...and one of the main reasons is..." THE ROLLED UP PROTECTIVE EDGING "...As the pan cools, it shrinks, the edge itself as well, and it's the rolled up edge that warps the pan...If you're really looking for the stainless steel pan that will not warp, go with the heavier gauge stainless steel, and also make sure that the edges are flash, seamless, without any rolled up edges...Since 18/10 stainless steel is mixture of two metals, stainless steel and nickel, if the mixture itself is not " mixed " wright, you will have a density difference, and these two metals act different when exposed to heat. Stainless steel is a very hard material, and it melts on much higher temperatures than nickel itself, nickel is much softer material, and it melts at much lower temperatures...the stainless steel that is produced today is a very cheap stainless steel, compared to a stainless steel from several decades ago...the new age producers claim " they've got technology ", so they can produce thinner pans...What some producers are making today, is nothing other than a trash...Since everyone is trying to save money, we all go cheep, and that's where we loose on quality, since we're all trying to save money...A good stainless steel half baking sheet will cost you around 50 $...this is also the one that you will probably leave to your grandkids to use, after you're well gone...LOL...but it will not warp, bent or rust...To better explain...if you heat up the 18/10 stainless steel with torch, it will become blue on surface, this blue is actually nickel coming out of the stainless steel, what really happens is, you're sweating the nickel out of the stainless steel, while the stainless steel itself continues to bond together, this is what happens every time you use those thin and cheap stainless steel pans...once again, this variation between two metals is also what's causing the warping of the pan...The solution again, maybe to go with a commercial grade stainless steel, and that would be...18/0...most griddles are made out of this material, and they never warp..." STAY AWAY FROM ROLLED UP EDGE PANS, IF YOU'RE PLANNING ON USING IT, WITH EXCESSIVE HEAT SOURCE...GRILLING, GRIDDLING and so on "...Rolled up edge just means, " THE PAN IS THIN "...all thin pans have rolled up edges, since the edge is razor sharp, and razor thin as well...18/10 stainless steel is only good if it's the heavier gauge material...18/10 is not material to be used for cooking in a thinner form...as a finish on the appliances...yes

**Q: What is the stainless content? 18/10?**
A: On the 18/10 rating the 10 indicates the amount of nickel in the stainless steel and the nickel makes it non magnetic. This is 18/8 so it is a little lower percent nickel but still non magnetic. I hope this helps you. It is a heavy duty baking sheet.

**Q: Are the measurements for this sheet interior or exterior measurements?**
A: The inside dimensions are: 10 1/8" wide x 15" long. Outside dimensions are 12" x 16 5/8". It is a heavy, good quality pan.

has a good, reassuring weight to it

*by D***· on Reviewed in the United States on July 8, 2016*

I've been on the lookout for a high quality stainless steel baking tray for sometime and this "heavy duty" Lindy's tray is just the ticket! The one I received was in pristine condition, has a good, reassuring weight to it, and has the Lindy's logo embossed on the bottom (flat). My fridge magnet doesn't stick to it at all, unlike it does to my quality Viners stainless cutlery, so I hope this isn't a bad sign, although I note that the magnet also doesn't stick to my quality stainless steamer (bought from John Lewis) or to the side of my stainless saucepans. I'm primarily using it to grill (broil) boneless chicken breast (brushed, using teaspoon, with extra virgin olive oil, adding freshly ground black pepper and sea salt), sometimes with Ore-Ida crinkle fries, turning both over after a good few minutes (once chicken has cooked to a degree on top), then after a few minutes, two additional turns at sixty seconds (fries through 90°, then over (180°), removing ones that have cooked quicker). I've also used it to bake Mrs Paul's Lightly Breaded Haddock Fillets (recommended; from frozen), at 400°F, turning at 13 minutes, and surrounding with Ore-Ida fries, turning both after another ten minutes, then just turning fillet after five minutes, with final five minutes cook time (total cooking time 33 minutes). Although the tray buckled a little bit, it was hardly anything to worry about.A big reason I wanted a stainless steel tray was so it could be 100% cleaned (no staining my light tea towel) and indeed, sometimes with the assistance of Scotch-Brite Heavy Duty scrub sponges (in the green/yellow packaging), and if necessary, a little neat washing up liquid, one can achieve a perfectly clean surface. I Initially had hoped I could just soak it in very hot washing up water, cleaning it with only a non-scratching plastic scrubbing brush, thus retaining the pristine look, but alas, this wasn't going to fly, and you just have to live with the light scratches you get from the Scotch-Brite sponges, which isn't a big deal (I would not recommend using anything tougher as this would likely scratch the hell out of it).

I like it - solid, shiny, smooth and easy to clean, but mine did warp at 450 with contents not totally covering the pan.

*by D***L on Reviewed in the United States on September 14, 2015*

I like almost everything about this pan, but mine has warped like so many of the others. It did not warp right away - I roasted veggies on it at 350-400 degrees probably 10 times before using it to bake slices of eggplant with olive oil at 450. My guess would be it was a combination of the higher temps and that the eggplant slices were so thin, making it closer to having an empty pan in the oven than when filled with veggies. When it came out warped I quickly took off the food, stuck it back in for a minute to heat back up, and then took it out and put my cast iron dutch oven on it on a flat surface, and I do think that it took out some of the warp. It is still usable and hasn't gotten worse, but I've not used it over 375 since then.It seems pretty solid and is shiny and smooth, and the food doesn't stick to it. It is very easy to clean. I would have probably liked one with higher sides like a jelly roll pan to keep things from sliding off better, but this works fine and it certainly is just as pictured, and this was the closest I could find to what I wanted in stainless steel and with a good rating.I would buy it again, mainly because I think it would be fine if I kept it at 400 or less to be safe, and because there don't seem to be many stainless steel alternatives that wouldn't have the same issue.

It will warp, but it's so shiny!

*by B***4 on Reviewed in the United States on December 20, 2016*

Updated - After about a month of use it now is permanently warped, about 1/2 to 1 inch from flat. Functional, but it's warped. I have other pans that have never warped so one commented about all pans warped is just not true. Still shiny!Original review -I got it because I wanted stainless steel and it was really cheap compared to some other pans (which also had reviews claiming problems, btw).It is quite pretty, very shiny, almost a mirror finish. But I noticed right away that I could easily flex the pan, kinda like a "cricket clickers". Of course I had read the previous reviews about flexing and warping but at this price I figured it was worth a try. But it definitely flexed. So I put it in the oven, unloaded at 350 F. No warping or flexing. On to the real test - loaded with meatloaf - finishing with browning of tomato coating-top under broil. The pan warped, about 1 inch. Not enough to cause problems I have pans that don't warp under these conditions. The pan did return to flat after cooling.Pros - it's cheap pretty and it does what I want it to do.Cons - If you are doing something that can't take warping, it's not for you. It is thin, just not super thin. But not quite thick enough to hold it's shape.
