Question 1

Which side should the fan be? The screenshots show the label on the inside but the instructions show the label on the outside.

I originally had the label facing outward and various images and videos (YouTube) around the web show it different ways. I've just switched mine to label inward - which I believe swaps from suck to blow and preliminary tests seem to show that the Pi - albeit 'at rest' i.e. doing practically nothing, runs around 4 degrees cooler: ~32 degrees, instead of ~36 degrees. I hope this helps this 'heated' debate! :o)

Are heatsinks all the same or do you have to remove ones you already have before installing this one?

If you already have heatsinks attached, just see if the case can fit around them. Only take them off and apply the ones that come with the kit if you have to. It shouldn't be a problem.

Question 3

Hi, I would like to screw the case to a wooden board, for my Christmas lights. Is there enough clearance so as not to short out the pi.

There are cross slit mounting holes on the back, but you might need to use plastic headed screw to stop it shorting out - the clearance is very little.
However you may be able to use thick double sided pads to secure it.

Question 4

Anyone know if the case fits Pi's with the PoE hat fitted?

I don't think there will be sufficient head room in this case for any kind of HAT.  You need to search specifically for cases which do
