Which motor is included on this one is it the Clutch or Servo?

That actually depends on the seller of the machine. In most cases I have seen, the seller will offer a package price for the machine head, table, and motor, and will offer an upgrade to a servo motor for around 100 dollars or so above the package price. If the motor upgrade isn't chosen or offered it probably comes with a standard clutch motor. Hope this helps you out.

Can you adjust the sewing speed? I don't want to sew too quickly.

Sure ! Just adjust the speed on the motor to very slow !

Can I change the feed dogs on this machine to sew lighter or heavier fabrics?

Yes. I haven't done it myself but I know it can be done on Juki machines.
