The taste for anise-flavored beverages was introduced to the shores of the Mediterranean in ancient times, during the Turkish and Hellenic domination. The cultivation of anise then gradually expanded to the entire Mediterranean area. The natural flavors are extracted from plants by steam or alcohol distillation. For mint, for example, the leaves are placed in a still, and then the water is heated. The steam that is formed crosses through the leaves and is impregnated with mint essential oil. It might seem strange to think of eating something that is lavender, violet, or rose flavored, even though flower-infused sugars and other baking ingredients are currently popular, as well as edible flowers, these little candies with the anise seed in the center are wonderfully refreshing. Years ago, I found it hard to find them, even at Cost Plus World Market that seemed to have every imaginable candy around. When I saw them here, I was so excited.
