So..with ANY food, the heat coming from bottom up is more intense than from the top projected down. All I do is sorta add "my thumb to the scale" by pressing down on the handle slightly (like I've seen @ panini bistros in town do) but I think the top is always still a little lighter color than the bottom. I don't have to "flip" anything...Maybe I'm just not that picky, or just hungry. Just kiddin'. The only "gripe", probably my lack in learning curve; is.. it's real easy when grilling meat to overcook but I like mine more rare than some folk. Overall..so far..I would give this 75% of outdoor grill ability and 150% of convenience and nasty weather avoidance benefit, it does a pretty good job for tool trying to be versatile (multiple applications) as large as it is spreading the wattage allowable on 120v/15amp circuit. If you are really particular and do not need the versatility, I would recommend you get a tool (panini maker) specifically for the application. They will be smaller and "crowd" the wattage into a much smaller area=more heat concentrated where you need it. Hope this helps. **Q: Anyone have experience with the Waffle plates? Tips? worth buying?** A: Yes I ordered one of these Cuisinart grills a few years ago and bought the waffle plates, they are very non-stick and make great waffles. The grill I ordered recently was a gift for my son and daughter-in-law, they love it. This is an excellent product and we love the fact that it is a wonderful Panini press also. **Q: Anyone try grilling a steak or other thick cut of meat? I am wondering if its comparable to using an outdoor grill.** A: OMD, we fixed a steak on the griddler last week. It was about 3/4" thick rib eye steak. We just watched it carefully as it was our first steak on the Cuisinart Griddler. Since it cooks from both sides, it didn't take as long as the outdoor grill, pan frying or broiling. We chose to turn the steak over once, habit I guess, so we could get the criss-cross marks on it. YUM!
