The rubber nubs on the underside of the ravioli tray keep it well grounded when using the rolling pin to seal/cut the ravs. Just remember to flour the tray well before pressing in the first sheet of dough other wise they will stick. A little bummed that I still had to use the cutting wheel to actually get them separated, but I typically use a thin dough that is slightly wetter so it stretches into the tray without breaking. P.S. I found a food processor makes quick work of getting a dough to the consistency where you can knead it.
