1200 pound load rating. Is that 1200 pounds each ring or 600 pounds each for 1200 pounds total?

Idk but I think the worlds heaviest person is well under 800 pounds... So unless u are that guy and doing dips with 500 pounds strapped to ya you're good.

what are the actual rings made from?

They are made of a resin type plastic. Seem to be really durable. I only weigh around 150 so I am not exactly heavy. Should be able to handle much more though.

Any suggestions on how to suspend these from the ceiling? I have a stud finder, but I would need some bracket to attach the 15' cables.

We used large eye bolts and used the studs in the attic. Drilling a small hole through the stud from the attic will allow you to find the right position from the room you are hanging them in.

Does it only come with one strap?

No, it comes with two straps. My daughter has had hers for years.
