this is better than regular angel food cake
Personally, this is better than regular angel food cake. My wife, who is not GF, likes it a lot better than the store bought stuff.I usually double the amount of vanilla the recipe calls for.Also, be SURE to allow the the egg whites to come to room temperature before whipping them.Additionally, use real egg whites -- the separated/pasteurized ones from a carton do NOT work well at all.Finally, if you want this to come out light and fluffy and how it should, you CANNOT use a non-stick baking pan. You need to get a good, NON-COATED aluminum angel food cake pan so that the cake will stick to the pan while it cools, otherwise the cake will separate from the sides and collapse once you take it out of the oven and not have the really light fluffy consistency of good angel food cake. Be sure to let it cool suspended upside down -- usually with an inverted funnel or similar supporting the center hole of the pan (though many of your better pans will have 3 2" standoffs equally spaced around the top to allow it to be set upside down for cooling without having the cake or center touch the counter top).

Wow! I can hardly tell the difference between this and glutenous angel food cake. It is one thing I missed since having a house that must be gluten-free. a family tradition is angel food cake in the summer at picnics...with berries or other fresh fruit. this is so good we bring it to neighborhood picnics and no one knows it is gluten free.

I love that you can buy a G/F Angel Food Cake ...
I love that you can buy a G/F Angel Food Cake mix. Very hard to find in stores. The flavor is a bit flat, though. I prefer angel food cake with more of an almond flavor. I suspect that adding almond extract (with it's oil content) would destroy the structure of the 12 stiffly beaten egg whites that you add the mix to, so I have not tried that. Wish there was a way to amp up the flavor a bit. Still grateful to have the G/F Angel Food mix available, though.

I use this to make gluten free 3 2 1 cake!!Mix one box mix with one box of any other gluten free cake mix. I use chocolate.Keep in upper ware containerTo make add 3 tablespoon of cake mix2 tablespoon of water, mix in a cup.. microwave for 1 minute!Yum and gluten free!

Best angel food cake, gluten free or not!!
Terrific taste and texture! Although I can eat wheat again I am sticking to this as my favorite dessert to make! I buy 5 at a time. The whole family loves it.
