Slides through difficult to cut through items
I’ve already bought 6 of these I love them so much! The nonstick coating helps them slide through dense and sticky foods like foies gras, cured meats, dried fruit products etc...

it is the best sushi side work knife . it cost more for the nonstick . they also have the regular one for half of its price .

My favourite knife
I have a number of kitchen knives including Wusthof but this is my favourite. It's lightweight, razor sharp out of the box and a joy to work with. It is not a knife to be used on heavy vegetables like squash or turnip and you definitely don't want to try cutting through meat bones with it. You'll chip the edge. But for pretty much everything else, it's like working with a surgeon's scalpel. I like it so much, I am gifting one to my son in law and another to my step-daughter, both of whom like to cook, this Christmas.

Good knife for detail work. But not strong enough to be a day to day work horse.
I love the knife it's got a razor sharp edge. And you can practically feel the quality holding it. That said this is not an everyday work horse knife this is for detail work. If you want paper thin anything you want this knife but don't use it on heavy root vegetables or take it anywhere near a bone. It's edge holds extremely well but if you mistreat it will chip super easily.
