They should work fine, you might need to make a bigger "hook" when forming it. If completely twisted together, these can hold up to 50 lbs or more.

I see how this would be perfect for ‘hooking’ onto something, but how will it secure a crutch to a flat tabletop or counter?

The ties are covered in a soft foam, so they tend to stick to flat surfaces. So you unwrap enough to reach the counter and it does a good job holding the cane in place.

Will it support a cane next to a flat table surface, or must it be "hooked" onto a curved area (like a chair back)?\

I think it might depend on the weight of the cane... you can bend or extend the material in any way you choose; there are other designs more specific for flat surfaces, but problem I've had is most won't fit canes larger in diameter than 1". I'm still looking for perfect one, but this one does work pretty good.
