Chocolate Zucchini Bread: Combine and mix well: 3 Eggs 2 Cups of Sugar 1 Cup Vegetable oil 1 Tsp gluten-free vanilla Combine and mix to form a paste: 2 tbsp melted butter 6 tbsp unsweetened cocoa Combine: 2 cups Gluten-free Pantry all-purpose flour 1 tsp baking soda 1/2 tsp salt 1 1/2 tsp ground cinnamon Add-ins: 2 Cups grated zucchini 2/3 cup chocolate chips mixed with 2 tsp Gluten-Free Pantry All-Purpose flour 1 cup chopped nuts (optional) Preaheat oven to 350°F. Lightly oil two 9x5-inch loaf pans. combine egg mixture with cocoa mixture and blend well. Add flour mixture and beat just to combine. Fold in add-ins. transfer to prepared pans. Bake 60-70 minutes.
