I Must Have Gotten a Bad Batch
When the packets came, the parmesan was a dark brown color and smelled bad. Unfortunately, I could not find a way to return them.

Not white cheese
This cheese does have a lot of cellulose or rind. It is a dark brown color. It's just lower quality Parmesan. It tastes and smells perfectly fine, just like Parmesan cheese. The little packets are small but they are a good serving size for me. I travel a lot and love taking little packets like this with me. Overall I am happy with them. I think they are a good value for the money.
