My favorite gluten free mix for waffles ☺️

This is a good keto friendly pancake mix. I mixed it with water, as per directions, and the batter was a bit thick. I put some coconut oil in a pan and fried three pancakes using 1 cup mix and 1/2 cup water. The pancakes came out just like regular pancakes and, with some good keto syrup, tastes just like regular pancakes. They have a good texture and taste.

I think the title is explanation enough. While these were not as fluffy as a traditional mix, I found them to have a decent level of fluffiness. They were delicious and the service size and water: mix ratio were easier to calculate for small portions compared to their traditional mix. The one detractor is packaging. After opening for the first time, so much mix was caked into the interior zip locking seal that I could not seal the package. I did not have this problem with their traditional pancake mixes, but I'm not surprised. Lower carb bread items tend to not shake loose from crevices as well as normal bread items.

Absolutely the best pancake mix, the cassava in it really adds a nice taste. Great pancakes especially when cooked in coconut oil they go all crispy, so delicious
