I'm always adapting my mother's chili recipe to see if I can improve on it or make it more economical. This time I tried using ground chicken and added a drained can of these fire roasted diced green chiles. The chili was delicious. I will keep cans of these on hand for more meals to make them a little spicier. You might also enjoy these when making enchiladas. They can also be added to soups!
