How many pieces (clamps included) ???

Only one piece, don’t use it much, tend to use magnetic clamps more, (which are a lot cheaper and work just as well) ideal if you’re working with ally or stainless but heavy and can’t be used off the floor in situ

Can the jaws be offset to clamp material of different thicknesses?

I would say definitely yes as the inside of the angle is clamped by a substantial block that "floats " horizontally to apply pressure on both pieces and the clamp screw is mounted in a rotating nut. YouTube shows the workings of the similar " BESSEY Welders' angle clamps " but that costs £ 160 I think !
