Does this product has caffeine & if does how much caffeine? How much lead and metal is found in the product? Stated  low acidilty what percent?

Hi Gwen, This coco powder has 1.8000 mg caffeine per 1 tablespoon serving. The pH range is 8.1-8.7. 
The soils of many cocoa growing regions contain heavy metals which can be taken up into some plants in minute quantities. Our cocoa suppliers are monitoring and testing their products to make sure they’re safe for consumption. All  the cocoas and chocolates we use are tested and are rated “no significant risk” for heavy metal contamination. They also comply with current FDA regulations. Happy Baking! Clara@KA

Can I use this to make royal Royal icing black?

Hi JK, It would be difficult to make a royal icing black with this cocoa powder. It could easily be used to make your icing grey, but by the time you added enough to turn it black, the icing would have so much cocoa powder that the consistency would be very different. Happy Baking! Clara@KA

What is the difference between this and ka's double dark cocoa powder, other than color? what makes the black cocoa darker in color?

Hello! The Black Cocoa is a Dutch processed cocoa that has been processed with extra alkali to give it a particularly dark tone. Our Double Dutch Cocoa is a blend of two cocoas: our Black Cocoa and a more standard Dutch process cocoa that is not as deep in color. This gives the Double Dark Cocoa a nice deep brown color and full flavor, without the harsh edge that using Black Cocoa alone can produce. Happy Baking! Clara@KA
