This couche is a bit pricey, but it is very high quality. The seemed edges are nicely finished and the linen cloth is heavy duty and flexible.

Nice thick linen canvas. I dust it with rice flour, but it hardly needs it. I have mostly used it for bread dough that is about 80% hydration, and haven't had any issue with the dough wanting to stick to the cloth. I shake it out and hang it up to dry on the back porch, and when I want to store it, I have been folding it (completely dry) and storing in an open plastic gallon ziplock bag - not zipped shut! However, I want to make a way to store it rolled up instead of folded, for the longevity of the cloth, as I read that long-term, the folds can cause weak points in the fabric.

This is a nice heavy couche that holds a light dusting of flour well. I’ve used it with dough up to 72% hydration all-purpose flour and it didn’t stick. It cleans easily just by shaking out the excess flour. It’s sturdy enough to mold the batard loaves pictured, or baguette. It’s plenty wide for baguette, and long enough for four batard loaves. The edges are finished nicely.

I have been baking sourdough and other breads at home for decades. Nothing special, merely the family bread. I used a metal "double-U" pan for baguettes and did not like it much, especially for high hydration (wet) doughs that tend to spread out. I bought the Saint Germain couche about four years ago. It was an expensive special treat for myself. I have been using it since then. It made a huge difference for baguette shaping and rising. Treat yourself to this one. It is more costly, but based on four years of frequent use experience, it is worth it.

Best proofing couche I have used. The results speak for themselves. Dough does not stick to the lightly floured cloth and rises brilliantly. Best present ever!

Prior to using this couche I would carefully fold parchment to try to acheive the same function. The couche is functionally far better than that, achieves better bread crust, and will probably last for years. I'm throwing out a lot less parchment paper, so the couche is paying for itself, and I'm baking better bread. Win win!
