I want to plug this into my electric piano and have it bluetooth to my wireless headphones. Can this handle that situation?

This device is not Bluetooth. It uses 2.4GHz (wifi basically) to communicate with each other. If you wanted to you can get a 3-1 Bluetooth transmitter.

The six channel claim is confusting. What are they talking about? Does it mean if I buy three pairs they can use seprate channels?

it means that 6 different transmitters can connect to a single receiver which means that you can have 6 different instruments connect to the same amp at the same time. As to how that would effect the latency and the clarity of each instrument remains to be seen. But, essentially, the capability to have 6 transmitters paired to a single receiver exists.

I bought this. Tested stereo and the left channel is ok but the right one is a mix of both channels. Returned it. Broken unit or it works like this?

I have only used it mono going into my board with the 1/4” adapter. 3.5 stereo works on mine too. I’m not sure if I answered your question
