The enzymes help to break down casein polypeptides into free form or (minimally) peptide-bound l-proline chains containing only 2-3 proline molecules, which can pass our gut barrier as properly digested proteins. So it refers to the probiotic organisms producing casein-digestive enzymes to help digest the casein in milk products, which is typically the most difficult and time-consuming milk protein to digest.
