How long do they last? I was going to order now and give as gifts on Christmas, will they be spoiled by then?

IF the cheese assortment arrives in good shape, which mine didn't as the cold pack had failed, as long as you keep it in the refrigerator, it should last.

This box arrives without anything saying it needed to be refrigerated? How long can it be without refrigeration?

Depends on ambient temperature it's exposed to. I would not buy it WITHOUT refrigeration.
