Could I use on the neck of an adult bib?

I think this would work well for that purpose. You would need to install it before sewing the two sides of the bib together so the prongs that you install it with would be on the inside, between the two layers of fabric. Otherwise the prongs would rub on the person's neck or back. You'd probably want some stabilizer in there to stabilize the snap. If you are working with only one layer of fabric, like a towel, for the bib (as I've seen some adult and child bibs), I would not recommend this. You'd probably want a regular snap, as it wouldn't have the prongs like this.

Would these work for doll clothes?

I think they are too large for doll clothes, but the problem I had was that they did not work AT ALL. I was sent only the female half of each snap, so in reality, I had nothing.
