My FAVORITE cake flour
I've tried several brands of cake flour, but this one is my favored! It makes such a difference, especially when baking my go-to Sour Cream Pound Cake. The texture turns out unbelievably soft and moist every single time. If you're serious about baking cakes with a perfect crumb and homemade flavor, this cake flour is absolutely worth it. I won’t use anything else for my pound cakes now!

This is the only true American Cake Flour with a really low protein level available that I've found in the UK! Every other supposed "Cake Flour" on closer inspection hasn't got the low protein level needed or described in American Cake recipes that call for 'Cake and Pastry Flour'. I've used this for over a year now and had repeat orders. They always arrive quickly, well packaged with the box of flour always in a sealed polythene bag to ensure no loss of product. It works really well in cake recipes that use the reverse creaming method. The cakes are so light and fluffy! Also works really well for whisked sponges, including Genoise, Chiffon cakes and Japanese Cotton Sponge cakes. These are the lightest cakes I've ever baked!

As a Baker I always liked to use Swans DOwn Cake Flour but it's not longer found in grocery stores. Luckily I can get it here. Although it's much more expensive I swear by its results.

Whoever is selling these, you are doing the Lord’s work! This is what cake should taste like. This flour gives it a perfect texture. It is crucial in American recipes and the result depends on it. Especially vanilla and white cakes. It is an irreplaceable ingredient, “plain flour” and the cornstarch substitute just doesn’t compete or compare. I’m sad it’s so expensive, but I cannot bake a white or vanilla cake without it. I've experimented with many flours and this is the only one that gives results. Even Shipton cake flour is higher in protein (9%) and I don't see it yielding a crumb that isn't too dissimilar from Homepride (which is slightly higher by 0.4%), it's the last resort for me, and I don't have high hopes. So far, Swans is the only flour that does it.
