Fantastic Frying Pan
This frying pan is fantastic for searing foods. I used it for steaks and it cooked evenly and heated quickly. Downside is that I had to cook each steak by itself since the bottom surface is 7.5". Also, use caution simply because it does heat up fast so no pre-warming necessary. My favorite thing and the reason I got this frying pan is because it can go from the stove to the oven. I have 6 frying pans but none that can do the stove to oven thing which is so helpful. I was impressed that the handle didn't heat up when I was cooking stovetop. I assumed that since it was completely stainless steel it would and was pleasantly surprised when it didn't - big plus. So, as of right now - my only complaint is that I wish the bottom surface was 10" - I have a couple of 10" pans and one has a 8.5" bottom surface and this one is measured 10.5" from side to side at the top rim of the pan. Oh, and another negative would be the price - even though this is a fantastic pan it's quite expensive.Measurements: bottom surface 7.5", the rim to rim surface is 10.5", the depth of the pan is 1 3/4" and the handle is 7.5" long.

A great addition to our existing Emeril cookware
We got the 3 quart sauce pan, which is actually shorter and wider than what I would consider a typical 3 qt sauce pan. That's good and bad. The good is that it provides a larger bottom surface area, so it heats more quickly and evenly across your food. The bad is that it can't share lids with our 1 qt pan/steamer/etc that are all the smaller diameter. It's not a deal killer, but beware of the diameter of this 3 qt sauce pan.Other than that (and I'm not taking away a star), it's great. It looks, feels, cooks, and cleans just like the rest of our Emeril cookware, which we've been using for a looong time now. Highly recommended.

Amazingly good heat transfer, great quality.
Really nice quality. I’m usually skeptical of signature stuff by TV chefs but I trust Emeril not to put his name on anything disappointing, and this doesn’t disappoint. This has the heat distribution comparable to commercial all-clad pans, but with a nice stainless finish that’s less industrial and not out of place in a home setting. For a 12 inch pan to heat this evenly on a standard output gas hob (like a typical Kenmore range), the aluminum inner core has to be pretty seamlessly incorporated, and it is.It’s worth every bit of the $60 I paid for it.

Very pleased
Bought this to replace my 25 year old RevereWare skillet that got lost in a move. (How does that happen?) I fried and scrambled some eggs in it today. I let it cool completely before scrubbing and the eggs came right out with a little detergent, water and a nylon scrubby sponge. The handle stayed cool when I cooked and the eggs didn’t stick with just a small pat of butter. Reasonably priced too. Only drawback is you cannot put the pan under the broiler, so I will have to use a cast iron skillet for that. Very pleased.

High quality, heavy duty cookware.
It's heavy and high quality. I'm a pretty terrible cook. I burn things a lot and this pot is so easy to clean! It works great on our induction cooktop and our gas stove. I am very happy with this purchase and wouldn't hesitate to buy more pieces from this collection.

Quick turnaround time, got exactly what I ordered, and nice pans to cook with.
I received a complete set of these for Christmas a few years ago. Unfortunately, we had "an issue" in our house and about 3 of my pans disappeared. I needed replacements. I am very happy with the quick service I got, and the quality of the pans in general.

Good pan, not flat.
While I do like how this pan cooks, it's not flat and won't be in my kitchen very long. The unlevel bottom becomes more unlevel as it heats up.

Unbalanced saucepan
The handle is too heavy for the saucepan. The center of gravity of the pan is only about 1/2 inch from the rounded bottom edge. I tried drilling the handle out to shift the weight back toward the middle, and no effect. It still tips very easily when empty on the stove, countertop, sink etc. I've been so frustrated for so long that I'm ditching it for a much better quality saucepan.

Great for induction
Pan heats quick and even, looks great, easy to clean. This is my 2nd one... ended up giving the first to someone else because they liked it so much! Would definitely buy again.

This has become my favorite skillet
Very nice skillet. Has strong construction but is not too heavy to handle easily. Cleans easily after a quick soak in soapy water.
