Is this fresh stock? The last time I ordered this brand it was too tough to eat. :(

I ordered this a long time ago and I remember it was ok to eat for breakfast, but not as fresh as if you had bought it directly from a butcher. Most chistorra is tougher than other sausages, so if you want something soft you might as well get something else. It also does not taste as good as authentic Mexican or Spanish chistorra, but it is probably the best you can find in this country.

No. It's cured and ready to eat. I guess you can cook it if you want, but it's okay to eat as is.

The ingredients and elaboration process of chistorra and chorizo are gluten free, but there is a slim risk that the facility in which they were processed may not be. Therefore, hard to answer, but I'd consider it mostly safe, and 100% delicious.

For how long does it have to be cooked?

I used to put it in my beans, or you could fried like regular sausage
